For Shortcakes:
• 1 1/2 cups all-purpose flour
• 1/4 cup granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup cold butter, cut into pieces
• 3/4 cup heavy cream
• 2 large eggs
For Strawberry Layer:
• 3 cups sliced strawberries
• 2 tablespoons granulated sugar
For Whipped Cream:
• 1 cup heavy cream
• 2 tablespoons powdered sugar
1. Preheat oven to 375°F.
2. Make shortcakes: mix dry ingredients, cut in butter, add cream & eggs.
3. Drop by 1/4 cupfuls onto baking sheet. Bake 18-20 minutes.
4. Prepare strawberry layer: mix sliced strawberries & granulated sugar.
5. Whip cream: beat heavy cream & powdered sugar until stiff peaks.
6. Assemble shortcakes: split shortcakes, layer with strawberries & whipped cream.
